King Oyster (AKA Trumpet Royale). This Mushroom has a wonderful savory flavor, a firm, meaty texture, and an amazing shelf life. Chefs in some of the country’s finest restaurants have remarked on its versatility and will often use it in place of wild mushrooms.

Baby Shiitake Mushrooms. (Organic) Our shiitake are button sized mushrooms and have a rich, fungal flavor. They are organic and were cultivated with care in the Pacific Northwest. 

Lion's Mane: Cultivated lion's mane mushrooms are generally relatively petite, with closely-packed fine teeth, resembling a cute white earmuff.  It has a reputation for being an excellent substitute for crab or lobster, making it very appealing to anyone who suffers from shellfish allergies. The mushrooms have a very mild sweetness. 

Hen of the Woods. (Organic) Known in Japan as Maitake, this petal-like mushroom is actually a type of polypore. Native to Japan and the United States, Hen of the Woods are highly prized for their unique flavor and crunchy texture. Cultivated in Oregon. Out of Season

King Oyster Mushrooms.  King Oysters are a type of mushroom originating in the mediterranean regions of Europe, the middle east and North Africa. It has little flavor or aroma when raw. When cooked, it develops typical mushroom umami flavors with a texture similar to that of abaloneOut of Season

Oyster Mushrooms. This Mushroom has delicate daffodil-yellow flower-like caps with pure white stems, and grows in large clumps. One such group could be used as a centerpiece for a dinner table. The almost fruity aroma reminds one of certain zinfandel red wines, and this sweet quality is not lost in cooking. Prepared in a baked noodle dish, its pleasant flavor mixes with the other ingredients without losing intensity.
