You will not find Alpaca in very many places, but Chef Eric Johnson swears by it - describing it as lean and mild but very rich in flavor. Alpaca is not economical to be raised just for meat, but using the fiber, the leather, and the meat makes alpaca ranching workable. We believe that diversity is a real key to changing the food supply system away from the industrial model and Alpaca is a low fat and very tasty alternative. Use as you would any ground meat from burgers to stuffed peppers.
