At Colorado Pastured Pork, happy and healthy pigs thrive on lush, riverside pastures. These heritage pigs root, roam and play among the nutrient-rich cottonwood forest. These heritage breed pigs prefer to work for their food and are regularly moved to fresh pastures. Pigs really do graze! These highly intelligent and social animals thrive foraging, playing and exploring the cottonwood forest and lush fields in Hotchkiss, Colorado.
Currently available cuts are:
Bone In Pork Chops. Package of 2 chops each is 1.8 lbs. That's nearly a 1 pound chop! Cut to 1" thick chops with the bone in for added flavor. Tender and "juicy" - unlike the tough dry pork that made you eschew pork chops. Thick enough to stuff, but incredible for any kind of grilling or other recipe.
Bone In Loin Roast. This is the roast from which a crown roast is made or simply a mouth watering juicy encrusted roast. Averaging 11 pounds with 8-10 ribs this is the big centerpiece of the feast.
Smoked Pork Jowl (Guanciale). Smoked and "cured" without using nitrates, this is the tender and flavorful coveted cut. Anything you can do with bacon and pancetta will be more uniquely flavorful with the smoked jowl - including bacon.
