Bolo Gone Wild. A uniquely rich and flavorful Bolognese made with elk, venison sausage, and wild boar with rich marinara over linguine
Call of the Wild Lasagna. Classic lasagna made more interesting and delicious with elk and wild boar, ricotta cheese and all the rest.
Sweet and Sour Orange Quail. Traditional stir fry with tasty boneless quail served over vegetarian rice.
Wild Side Stroganoff. Elk and Wild Boar with creamy mushroom sauce in a wild preparation of the classic. Served over egg noodles.
Pheasant Alfredo. Boneless pheasant breast in a rich alfredo sauce with spinach and mushrooms over linguine.
Pheasant Marsala. Classic marsala preparation with a fresh and flavorful boneless pheasant breast.
Elk Enchiladas. Served with out famous Hatch's green chili sauce and cheese and served with refried beans and Spanish rice.

Veggie Shrimp Alfredo: Our twist on an Alfredo with spinach, tomatoes and tender shrimp in a rich cheese sauce over penne pasta.
Chicken Marsala Chasseur (Hunter's Chicken): Chicken and mushrooms in savory marsala sauce chasseur over linguine.
