Rockland, Maine’s Kate McAleer gives the chocolate bar a wholesome — and exotic — makeover. McAleer has been wowing the candy world with her Bixby Bars since the company’s inception in 2011 — when she was all of 23 years old. Kate and her mother, Donna, started the company from scratch and have won many awards for their efforts. While at pastry school, McAleer became intimately acquainted with the overabundance of preservatives, additives, and corn syrups in conventional American candy making. Seeking an alternative—for the sake of taste and health—she began to experiment with bar prototypes using chocolate (as opposed to chocolate compound) and real fruits (as opposed to fruit flavorings), nuts, and spices to create the kind of treats she had loved in Europe.
Because the exotic ingredients (read: including chipotle, goji berry, cardamom, and Vietnamese cinnamon are teamed up with hazelnuts, almonds, walnuts, peanuts, or pistachios, and then coated in organic dark, milk, or white chocolate) are all natural and preservatives are not used, shipping the offering in the heat of summer is not ideal. While the products all have a one year shelf life ( no way they last that long!), we only ship them in the colder months. So stock up now!
